It would be at London’s Two One Four Gin Bar that a moment of clarity dawns upon the duo, ultimately resulting in the inspiration for Bermondsey Mixers. Both Nick and Lawrence were of the opinion that most commercial tonics held an overpowering essence of the quinine extract used in their production. Often, these tones are too overpowering and subdue the more subtle nuances of the gins being served. Being invested in the prospect of gin as they were, Nick and Lawrence decided to do something about it.
The answer to the problem lay in cinchona bark; the key ingredient that gives tonic its characteristic bitter taste, and which a majority of manufacturers substitute with quinine extract. For Bermondsey, cinchona bark is specially imported from South America and used in its natural form. What comes out of the bottle in the end is a beautiful, naturally amber-hued tonic that is lighter and crisper than any other commercial brand.
